Say hello to Nick Hawke

Having learned his trade under some of Britain's finest Michelin starred chefs, Nick now leads our kitchen team and is dedicated to raising the culinary bar, making Talland Bay one of the best foodie hotels and restaurants in Cornwall.

When we say that Nick and his team live and breathe the locally-sourced mantra, we really do mean it. He often hand-selects produce from local farms and fishermen to make up the menu here at Talland Bay, and because of this, we don't only attract travelling foodies, but locals too.

If Nick could choose anything to cook, what would it be? "Seafood", he screamed with excitement. And a great choice considering our location. We're talking everything from roasted Cornish scallops with smoked roe taramasalata (served with celeriac, pickled apple, and focaccia of course!), to Cornish crab and mussel cannelloni with pangritata and tartare ketchup.

Often the unsung heroes of the region, but heroes we love to big up, are the free range meat and game on offer in Cornwall. Nick's Cornish pork plate is to die for, featuring confit pork belly, cider-glazed cheek and jowl, hog and black pudding terrine, and pork tenderloin, all accompanied by salt-baked heritage carrots.

Although we were booked in for B&B we ate in the hotel restaurant most evenings too because the food was excellent. We loved the canapés that were brought out whilst you were looking over the menu. We ate in the conservatory and fine dining restaurant and both were excellent. We also had afternoon tea twice because it was so good.

The hotel was fabulous - we could not find fault at all, as was the food and service in the restaurant. My husband was especially taken with the separate menu of 50+ different gins! The meals we had in the main restaurant are some of the best we have had anywhere - a great chef!

Stayed at the end of March for a couple of nights for my dad's 70th birthday and had an amazing time as always (6th stay). With a little bit of advanced planning between myself and the lovely staff, my dad was treated to a delicious birthday cake made by the chef himself and everyone in the restaurant sang happy birthday to him! This made it a really special and memorable occasion so I'm very grateful to the staff for allowing that to happen. Topped off with pretty great weather and tasty food, we couldn't have asked for a better couple of days.
